CHICKEN BIRIYANI :
INGREDIENTS :
COOKING THE RICE:
1. Jeerakasala rice - 1 cup
2. Water - 1 1/2 cup
3. Whole garam masala
4. Oil - 3 tbsp
5. Ghee - 1 tbsp
6. Lemon - 1 no
7. Onion - 1 medium size
8. Carrot - 1/2 piece
9. Green chilli - 4 no
10. Pineapple - small slice
11. Ginger garlic paste - 1 tbsp
12. Salt - as per need
13. Sugar - 2 tsp
14. Milk - 4 tbsp
CHICKEN MARINATION:
1. Chicken - 1.200 kg
2. Turmeric powder - 1 tsp
3. Kashmiri chilli powder - 1 tbdp
4. Ginger garlic paste - 1/2 tbsp
5. Salt - as required
MAKING BIRIYANI GRAVY:
1. Onion - 5 medium size
2. Green chilli - 3 no sliced
3. Tomato - 4 no
4. Oil - 3 tbsp
5. Whole garam masala
6. Turmeric powder - 1/2 tbsp
7. Coriander powder - 2 1/2 tbsp
8. Coriander leaves, mint leaves, 4 no green chilli - make it paste
9. Garam masala powder - 2 tsp
10. Curd - 3/4 cup
11. Black pepper powder - 2 tsp
GARNISH:
1. Fried onion and curry leaves
2. Coriander leaves
DESCRIPTION :
Mix chicken with turmeric powder, salt, kashmiri chilli powder, ginger garlic paste and fry it in the oil. In a pan, put oil, whole garam masala, sliced onion, salt and saute well add ginger garlic paste to it and saute for some more time. To this add turmeric powder, coriander powder and green chilli and saute it. Meanwhile in a mixer jar put green chilli, mint leaves, coriander leaves, water and paste it. Add this paste to the gravy. Add tomato and cook for some time. Add curd to it. Add water and fried chicken and cook for some time. Add some coriander leaves, garam masala and pepper powder to it and cook well.
In a biriyani pot put oil, ghee, whole garam masala to it. Add cashew nuts and kismis to it. Add onion, carrot, green chilli and salt to it and cook it. Add pineapple to it. Then add ginger garlic paste and lemon juice to it. Add required water along with milk to it. When it starts boiling add strained rice to it. When it is altmost cook add fried onion, coriander leaves, ghee, garam masala to it for garnish. Cover it with aluminum foil for dum and off the flame.
