Lunettes Cookies with Peach Jam (Sablé Dough)
Recipe by François Payard
Makes about 30 sandwich cookies
Ingredients
• 8 oz (240 g) unsalted butter, room temperature
• 1 cup (240 g) granulated sugar
• 2 large eggs
• 3 3/4 cups (480 g) all-purpose flour
• 1 1/4 cups (120 g) almond flour
• 1 tbsp (15 g) water
• Peach jam (or your favorite jam)
• Confectioners’ sugar, for dusting
Instructions
Beat butter and sugar until light and fluffy. Add eggs and mix to combine.
Add all-purpose flour and almond flour. Mix until combined. Add water and mix until smooth.
Divide dough in half, wrap, and chill for about 2 hours or overnight.
Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
Roll dough to about 1/4 inch thick. Cut cookies with a 2-inch cutter. Cut small windows in half of them.
Bake until lightly golden. Cool completely.
Spread peach jam on the solid cookies, top with the cut-out cookies, and dust with confectioners’ sugar.
