Authentic Air Fryer Tandoori Chicken (Restaurant Style) 🍗🔥
Ingredients:
• 1 kg Chicken drumsticks or thighs (skinless).
• The First Marinade: Juice of 1 lime, 1 tsp salt, 1 tsp Kashmiri red chili powder (for color).
• The Second Marinade: 1 cup Thick Greek yogurt, 1 tbsp Ginger-garlic paste, 1 tbsp Mustard oil (gives the authentic smell), 1 tbsp Garam Masala, 1 tsp Kasuri Methi (dried fenugreek leaves).
• Garnish: Sliced red onions, fresh cilantro, and lime wedges.
Instructions:
1. Deep Cuts: Make 2–3 deep slashes in the thickest part of the chicken. This allows the marinade to reach the bone.
2. First Rub: Rub the lime juice, salt, and chili powder into the chicken. Let it sit for 15 minutes. This "opens up" the meat.
3. The Yogurt Bath: Mix the second marinade ingredients and coat the chicken thoroughly. Let it marinate for at least 2 hours (overnight is better for that "real" flavor).
4. Air Fry: Arrange the chicken in a single layer. Do not crowd the basket.
5. Cook: Air fry at 200°C for 15–20 minutes.
• Pro-Tip: Flip the chicken halfway through. You want to see those "charred" black spots—that is the signature Tandoori look!
6. Optional Smoke (The Secret): Place a small piece of burning charcoal in a foil cup inside the basket. Pour 1/2 tsp of oil/ghee on the coal and close the basket for 3 minutes while the Air Fryer is off.
7. Serve: Serve with a mint-yogurt chutney and plenty of raw onion rings.
