Whole Grain Einkorn Biscuits
4 cups fresh milled whole grain flour
1 ½ tbsp baking powder
1 tsp salt
½ cup butter(cut into cubes)
1 cup plus 2 tbsp buttermilk
Mix together flour, baking powder and salt. Add in cubed butter and mix with fork, hands or pastry blender until butter is incorporated into the flour. Pour in buttermilk and mix until mixture comes together. Dump out onto counter and knead a few times. Fold dough over itself 2-3 times. Roll dough out to 3/4 inch thickness and cut out with a round cutter. Place onto pan and bake at 450° oven for 10-14 minutes.
