These peppermint creams very easy to make. Makes perfect after dinner treat at parties, use as decoration on choc mint cupcakes or for any day to enjoy.
Ingredients:
1. 2 egg whites, at room temperature
2. 5-7 cups powdered icing sugar, sifted
3. 1/4 teaspoon peppermint flavoring extract
4. 200g (7 oz) cooking chocolate
5. Round cutter, plastic wrap
Method:
1. Beat the egg whites until frothy in electric mixer.
2. Add the peppermint extract and 4 cups of the powdered icing sugar. Combine using electric mixer on low speed together well. Use another 1-2 cups of powdered icing sugar depending on the size of your eggs. Slowly add the extra icing sugar until the dough is no longer sticky.
3. Turn the dough out on a working surface dusted with icing sugar and knead until combined.
4. Use a rolling pin to roll the dough out flat to a 1 cm (1/2 inch) thickness. To give the peppermint creams a rounded top lay plastic wrap over the dough before cutting. Cut out circles out with a round cutter. Set on tray lined with non-stick baking paper and allow them to dry overnight.
5. Melt the chocolate in a double boiler or on top of saucepan with simmering water and when it has cooled quite a lot but not beginning to set, dip each peppermint cream halfway. Set aside again on non-stick backing paper until the chocolate has set.
To decorate as baymax and hashtag symbol: place melted chocolate prepared as above into piping bag fitted with tip 2. Pipe on top of peppermint creams. Set aside to set. Makes about 40 peppermint creams.
