Pizza Dough:
1000g (1kg) All-purpose flour
3 TSP Instant Yeast
2 TSP Kosher Salt
800g (80% Hydration) Warm Water (80°F - 90°F)
55g Olive Oil - cover the top, don't mix in.
Pizza Sauce:
1 Can (796ml/28oz) San Marzano Tomatoes
1 TSP Kosher Salt
1 TSP Black Pepper
1 TSP Dried Oregano
2 TBSP Olive Oil
1 TBSP Tomato Paste
Cheese: Fior di Latte
Pizza Dough / Pan Math
Measure your pan in centimetres (Length x Width)
Example:
If your pan is 20cm × 30cm
= 600 cm²
Total dough weight (in grams) = 600 ÷ 2 = 300g
To figure out your flour weight and 80% hydration:
Dived your 300g (your number) by 1.8
Flour = 300 ÷ 1.8 = 167g
Water = 167 × 0.8 = 133g
