Upside-Down" Honey & Fruit Tarts 🍎🍯
Ingredients:
• 1 sheet Frozen Puff Pastry (thawed).
• 1 Large Apple or Pear (sliced very thin).
• 4 tbsp Honey.
• 1 Egg (beaten, for egg wash).
• Fresh Thyme or Rosemary.
• Optional: A slice of Brie or Goat cheese.
Instructions:
1. The Base: On a baking tray with parchment paper, make 6 small puddles of honey (about 1 tbsp each).
2. The Flavor: Place a sprig of thyme and your fruit slices (and cheese, if using) directly on top of each honey puddle.
3. The Pastry: Cut your puff pastry into 6 rectangles. Place one rectangle over each fruit pile, pressing the edges down to "seal" the fruit inside.
4. The Wash: Brush the tops of the pastry with the beaten egg. This gives it that professional "mahogany" glow.
5. The Bake: Bake at 200°C (400°F) for 15–18 minutes until the pastry is high and golden.
6. The Flip: Let them cool for 2 minutes (so the caramel sets slightly), then use a spatula to flip them over.
7. The Result: You have a gorgeous, glossy tart where the honey has acted as a natural glaze for the fruit.
