Vietnamese-Inspired Fried Rice After Breakfast Service 👌😊👍 | POV Cooking

Описание: Straight after breakfast service, it was time to get ready for lunch — and today’s special was a Vietnamese-inspired fried rice served alongside carvery day.

I used jasmine rice, mange tout, red onion and bean sprouts, then made a little “magic sauce” with ginger, garlic, coriander, olive oil and sesame oil. That went straight onto the griddle while frying the rice, with soy sauce for seasoning and plenty of fresh herbs — coriander, parsley and basil.

The fried rice was topped with the customer’s choice of roast meat from the carvery and finished with sweet chilli sauce.

Not traditional Vietnamese food, of course — just a chef-manager’s canteen-style, Vietnamese-inspired lunch special made during a real working day.
