Perfect Healthy Jamaican Pumpkin Rice

My Pumpkin Rice is a very healthy and delicious side dish. It is very easy to make and tastes amazing. @CreateWithDarrion-kp3it #pumpkinrecipes
INGREDIENTS
1 small onion
1-2 scallion chopped
3-4 garlic cloves
2 tablespoons olive oil
1/2 cup coconut milk
1 cup vegetable stock
3/4 tablespoon turmeric/curry powder
1 1/2 teaspoon all purpose seasoning
6 pimento beans
1 whole scotch bonnet pepper
4 sprigs fresh thyme
1 cup rice
1 1/2 cups pumpkins
1 1/2 tablespoons dairy-free butter (optional)
black pepper and salt (optional or to taste)
INSTRUCTIONS
Heat oil on medium heat, in a medium sized non stick pot, add the olive oil.
Saute the scallion, onion and garlic until soft and translucent.
Stir in the coconut milk and vegetable stock.
Add the turmeric/curry powder, all purpose seasoning, pimento berries scotch bonnet, thyme and pumpkin
Stir everything together.
Add the rice, dairy free butter and pumpkin.
Bring to a boil then reduce the heat
Put the lid on the pot and allow the rice to cook for 25-30 minutes.
Leave the rice to cook for the given time, don't stir the rice too much or the pumpkin will turn mushy
The rice should be fluffy, and the liquid absorbed completely.
Once the rice is cooked, add the black pepper and pink salt to taste.
Discard the thyme stems and scotch bonnet pepper before serving.
