2/3 cup creamy peanut butter
3 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp toasted sesame oil
1-2 tsp chili garlic sauce, optional
1-2 tbsp maple syrup
1 juice of a lime
1/3-1 cup hot water
2 tbsp olive oil
6 cloves garlic, minced
1 tbsp ginger, grated
16 oz brown rice noodles (sub with white)
3 baby bok choy, sliced in half (or chopped)
1 red bell pepper, sliced
1 1/2 cups red cabbage, sliced
1/3 cup peanuts, chopped
