Chapssal donuts "찹쌀 도넛" are korean donuts made with glutinous rice flour. Filled with sweetened red bean paste and coated with sugar. Glutinous rice flour dough creates the crunchy outside and chewy inside like mochi rice cake.
Ingredients:
Glutinous rice flour 510g
All purpose flour 90g
Sugar 90g
Baking soda 2g
Baking powder 12g
Softened butter/ Shortening 36g
Water 330~340g
Salt 6g
Red bean paste 440g (for Filling)
Sugar 80g (for coating)
Oil (for frying)
재료:
건식찹살가루 510g
중력분 90g
설탕 90g
베이킹 소다 2g
베이킹 파우더 12g
쇼트닝 36g
물 330-340g (습식찹쌀가루 물 132-156g)
소금 6g
팥앙금 440g
설탕 80g
It is best to consume all the doughnut within the first few hours of making them.
Keep left over donuts in an airtight container for up to two days. (but the doughnut get soft, not crunchy and the inner layer gets hard. Also the sugar starts melting).
