There are of course exceptions in particular instances (Luke and Anakin's raw power in the Force is enough to overwhelm almost any other Force-sensitive) where the raw power creates too large of a gap to be overcome by a weaker opponent.
Sith are strong in the Force and their training centers around combat, so they can defeat Jedi who maybe don't dedicate as much time to battle as they do alternative means of conflict resolution.
But on the whole, tapping into the Dark Side will make one forgo their self-control in exchange for power, while a Jedi who remains centered will be able to keep their wits about them and succeed.
