Pork spit-roast (kontosouvli) that I'm grilling in this video differs in salting. As you may know, the salting of meat a few hours before grilling stiffens the meat by absorbing all moisture. This time I tried a salting method with salty water, brining. It's a way of salting that not only won't stiffen the meat but in fact, will soften it!
