Easy Mamon cake is a very popular Filipino-style sponge cake. Traditionally they are simply served with just butter and sugar. It's very light, soft and fluffy and usually serve for breakfasts or snacks.
you need:
for the batter:
4 large eggs, separated
¼ cup sugar
¼ cup vegetable oil
½ cup milk
1 ¼ cup cake flour
1 tsp baking powder
¼ tsp salt
for meringue:
4 large egg whites
¼ cup sugar
¼ tsp cream of tartar
for the toppings:
grated cheese
butter
to do:
1. Preheat oven to 350°F.
2. In a bowl, beat egg yolks and sugar until color turns light. Add oil. Alternately, add the flour and milk. Lastly add the baking powder and salt. Set aside.
3. In another bowl, whisk egg whites and add the cream of tartar and sugar until soft peaks. Fold into the cake batter.
4. Fill the molder ¾ full. Bake 350°F for 20 to 30 minutes.
5. Spread butter on top and sprinkle with cheese or a sugar.
