Okara is the pulp left after making fresh soy milk.
And honestly… my heart breaks every time I hear someone say they throw it away.
It’s packed with fiber, protein, and minerals — way too valuable to waste.
Every time I make soy milk, I look forward to creating my favorite okara recipes — both sweet and savory.
Why I love these okara patties:
✨ Easy to prep + freezer-friendly for quick meals
✨ Subtly nutty in flavor
✨ Crispy outside, tender inside
✨ Completely zero waste
This is why I love from-scratch cooking:
👉 One ingredient (soybeans) becomes soy milk and nourishing patties.
Nothing lost, everything gained. 🌱
🥢 Recipe:
500 g/2 ½ cups okara
1 medium white onion, finely chopped
1 bunch cilantro, chopped
1 tbsp fresh lemongrass, minced
2 tbsp tomato paste
2 tbsp sriracha
2 tsp vegan fish sauce
1 tsp salt
¼ tsp white pepper
4 tbsp oat flour
Mix okara, onion, cilantro, lemongrass, tomato paste, sriracha, vegan fish sauce, salt, white pepper, and oat flour. Shape into patties, pan-fry until golden, then bake at 175°C (350°F) for 15 minutes.
