INGREDIENTS
FOR MUTHIYA DOUGH
1 Bowl Coarse Wheat Flour
⅓ Cup Besan
½ Cup Green Garlic (Finely Chopped)
½ Cup Methi Leaves (Chopped)
1 Tsp Chilli Paste
1 Tsp Ginger Paste
Salt To Taste
1 Tsp Coriander Powder
1 Tsp Cumin Powder
1 Tsp Red Chilli Powder
½ Tsp Haldi Powder
¼ Cup Sugar
1 Tbsp Ajwain
1 Tsp Baking Soda
Juice Of 1 Lemon
3–4 Tbsp Oil
Water As Required
2 Tbsp Oil
FOR FRYING
Oil As Required
FOR SHAAK
5–6 Tbsp Oil
1 Tsp Mustard Seeds
1 Tsp Jeera
1 Tsp Hing
1 Tsp Ajwain
½ Cup Tuver Dana
1 Bowl Surti Papdi (Peeled & Trimmed)
1 Tbsp Green Chilli Paste
1 Tsp Ginger Paste
12–15 Nos Garlic Cloves (Crushed)
Salt To Taste
1 Tsp Red Chilli Powder
1 Tsp Coriander Powder
1 Tsp Jeera Powder
½ Tsp Haldi
Water As Required
FOR FINAL TADKA
5–6 Tbsp Oil
2 Tbsp White Sesame Seeds
2 Nos Dry Red Chillies
1 Tsp Hing
2 Tbsp Desiccated Coconut
¼ Cup Green Garlic (Finely Chopped)
FOR FINISHING
¼ Cup Fresh Coriander Leaves (Finely Chopped)
Juice Of 1 Lemon
¼ Cup Gud

METHOD
1. In A Parat, Add Coarse Wheat Flour, Besan, Green Garlic, Methi Leaves, Chilli Paste, Ginger Paste, Salt, Coriander Powder, Cumin Powder, Red Chilli Powder, Haldi Powder, Sugar, Ajwain, Baking Soda, Lemon Juice And Oil And Mix Well.
2. Add Water As Required And Make A Dough.
3. Add 2 Tbsp Oil And Knead Properly.
4. Shape Bite Size Muthiya With Hands And Keep Aside.
5. Fry In Hot Oil On Medium Flame Till Golden And Crispy. Keep Aside.
6. In A Pressure Cooker, Add Oil, Mustard Seeds, Jeera, Hing And Ajwain.
7. Add Tuver Dana And Surti Papdi.
8. Add Green Chilli Paste, Ginger Paste And Crushed Garlic.
9. Add Salt, Red Chilli Powder, Coriander Powder, Jeera Powder And Haldi And Mix Well.
10. Add Water As Required, Mix And Give 2–3 Whistles.
11. Open Lid And Add Fried Muthiya.
12. For Final Tadka, Heat Oil In A Pan. Add White Sesame Seeds, Dry Red Chillies, Hing, Desiccated Coconut And Green Garlic And Let It Crackle.
13. Add Tadka To Cooker.
14. Add Fresh Coriander, Lemon Juice And Gud.
15. Mix Well And Cook For 2 Minutes.
16. Serve Hot Garnished With Chopped Coriander
