For the Holidays I cooked this 4.6lb prime boneless rib roast at 130F (55C) in a water bath for 4 hours then oven seared it at 525F for 9 minutes. Used a wide variety of spices and herbs but mostly butter, fresh minced garlic, salt, pepper, and other various steak seasonings for the herb butter. This method made the roast come out a perfect and extremely juicy medium rare edge to edge. Fantastic and foolproof!
