While the beef rests, I bake rustic country bread in a traditional stone oven.

Flour, water, fire — nothing more.

The oven warms the space, the bread rises slowly, and the day moves at its own pace.

For a brief moment, I bring the beef closer to the fire.

A handful of straw and fruit wood — just enough smoke to give the meat a gentle aroma.

Not to cook it, only to mark it with fire and memory.

Then the flames rise.

The beef meets strong fire, turned carefully, sealed on every side.

The outside darkens, the inside stays soft and almost raw — just as it should be.

This is not about recipes or precision.

It’s about patience, instinct, and the quiet rhythm of an old French countryside day —

stone walls, bread in the oven, fire in the hearth, and food made slowly, without words.
