Convectional oven: Bake the cakes at 350 F.
3 6-inch cake pans: 35 minutes
2 8-inch cake pans: 40 minutes
Ingredients:
1 box vanilla cake mix
3 eggs
1 cup yogurt
1/2 cup oil or butter
small box vanilla pudding mix
2 cups milk
1 pint heavy whipping cream
1/2 cup raspberry jam
14 oz. Marzipan
2 tbs. powdered sugar plus more for dusting
1 tsp. vanilla extract
Food coloring (optional)
Directions:
Prepare the cake mix according to the directions on the back of the box but instead of water substitute with either sour cream or yogurt. Add the batter to 2 greased and floured cake pans and pressure cook them for 25 minutes with 2 cups of water in the pressure cooker. You can also bake these in a normal oven using 2 8 inch cake pans for best results. While the cakes are baking prepare the vanilla pudding and whipped cream and store them in the fridge to chill. Once the cakes are ready, quick release the steam and place the cakes onto a cooling rack. Cut the tops of the cakes so they are leveled.
To assemble the cake add a layer of raspberry jam and continue with a layer of vanilla pudding. Add the second layer of cake and top with the whipped cream. Create a dome on top and place the assembled cake into the fridge. Unwrap the marzipan and color it with a drop or two of food coloring. Knead it into the dough until fully combined and roll the dough on a lightly powdered sugar dusted surface. Once it is rolled out to the size plus height of the cake roll it up onto the rolling pin and lay it on top of the cake. Carefully pull the edges outward and cover the cake working with one edge at a time and cut the remaining dough on the bottom of the cake with a knife. Dust off the remaining powdered sugar with a wed pastry brush and finish the cake with a super light dusting of powdered sugar. Enjoy! ❤
