Vacherin Fribougeois is the essential ingredient of the classic Swiss fondue and one of the most endangered artisan cheeses and was first mentioned in the earliest records of fondues about 1,000 years ago.

Today it is made by only a handful artisan cheesemakers who find it hard to justify the effort that goes into making a genuine Vacherin Fribourgeois - therefore it has become something of an endangered species.

The aroma and flavour are very memorable and profound. Washed rind gives the cheese a farmyardy aroma. The paste is deep cream colour and very smooth, with occasional small eyes. The flavour is intense and full of sweet milky notes with underlying nutty and even chocolate-y notes.
