Salmon Soup that heals the Soul 🍲👇 Step-by-step recipe is below 👇
🌱A soup so warm, a broth so deep,
It hugs the heart, it soothes, it speaks.
My husband calls it food for the soul,
A bowl of comfort, making us whole.
🌱Ingredients:
• 2 salmon steaks
• ½ cup light brown rice
• 1 whole onion 🧅
• 3 whole garlic cloves🧄
• 1 teaspoon chives
• 1 teaspoon dried garlic
• 1 teaspoon turmeric
• 1 teaspoon dried parsley
• Salt & pepper to taste
• 4 potatoes 🥔, cubed
• 2 carrots 🥕, cubed
• 7 cherry tomatoes 🍅, halved
• 1 tablespoon lemon juice
• Fresh parsley 🌿
🌱Instructions:
1. Start the base – In a soup pot, add water, add the washed rice, whole onion, and whole garlic cloves, bring water to a boil.
2. Simmer – Reduce heat to low (just below bubbling) and let it gently simmer until the rice is almost cooked.
3. Season the broth – Add salt, turmeric, dried garlic, chives, and dried parsley. Stir well.
4. Add the salmon – Place the salmon steaks into the soup and season with pepper. Let it cook for 7 minutes, then carefully remove the salmon. (It should be almost done but not fully—this prevents overcooking.)
5. Remove aromatics – Take out the onion and garlic cloves.
6. Build the flavors – Add the potatoes, carrots, cherry tomatoes, and lemon juice. Continue simmering.
7. Final touches – When the potatoes are almost tender, add fresh parsley. Test doneness by piercing a potato with a knife.
8. Finish cooking the salmon – Turn off the heat and return the salmon to the pot. Cover with a lid and let it rest for 10-15 minutes—the residual heat will gently finish cooking the salmon to perfection.
