Freeze dried food is not weird! This is the homemade cheese sauce / queso recipe you've been waiting for, lol. You can whip this up very quickly and have a luscious and creamy sauce that came from your prepper pantry... this is a game changer! You do need a specialty ingredient called Sodium Citrate, which is a natural salt found in citrus fruits as they ferment. It's the ingredient that makes regular cheddar and jack cheeses act like a processed cheese when melted. It's an emulsifier and an alkalizer that will ensure that your sauce can be cooled and reheated without separating. But don't worry, you can order it from Amazon and it's relatively cheap, about $8 for a good sized bag of it which will last for dozens of recipes. Order you some for your prepper pantry. This time, I used 1 cup of cheddar and 1/2 cup of pepper jack. The types of cheeses you use are totally up to you. You could definitely use all cheddar if you prefer. And yes, you can make this with regular fresh cheese, pretty much any cheese you want, but that's not what my channel is for.

This recipe can be substituted in any recipe that calls for a can of condensed cheese soup.
Basic Cheese Sauce Recipe:
Start with 1 cup water over medium heat and add 1/2 tablespoon sodium citrate. Dissolve the salt completely in the hot water.
Blend a total of 1.5 cups of freeze dried cheese in a blender to make a powder (I used 1 cup cheddar, 1/2 cup pepper jack)
Add blended cheese to simmering water in batches, allowing a minute or so to melt, then adding more. Add another cup of water in increments, alternating with the cheese, until all the cheese and the remaining water is incorporated. Whisk constantly. This entire process should only take about 5 minutes total. Add black pepper if desired. When the cheese has completely melted and the sauce is smooth, it is ready to use.
Options: combine with cooked macaroni noodles for homemade mac and cheese, use as a dip for veggies, pour over tortilla chips for 'ballpark style' nachos, use as a base for broccoli cheese soup or any other cheese based soup, etc.
Salsa con Queso Variation:
To make this dip Tex-Mex, after completing the initial steps, add diced tomatoes, diced green chiles, chopped onion, garlic, chili powder, cumin, and a pinch of cayenne pepper and cook for an additional 5-10 minutes. Enjoy piping hot with tortilla chips for restaurant style chips and queso, or pour over enchiladas, burritos, rice, eggs, beans, breakfast tacos, etc.
Tip: You can keep this sauce in a crock pot on the Keep Warm setting for a party. Just keep the chips in a bowl next to it.
Variations: you can use other liquids in addition to water to make different flavors. Think beer for beer cheese or brandy/cognac for fondue, chicken broth for a more savory flavor, milk for a creamier sauce, etc. The sky is the limit!
