MY CHOCOLATE WEDDING CAKE RECIPE
MATERIALS
2 6-inch cake pans
Pot for boiling water
Whisk
Cooling racks
INGREDIENTS
1 cup (198 g) granulated sugar
1 scant cup (105 g) flour
1/2 scant cup (32 g) dutch processed unsweetened cocoa powder
3/4 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1 large egg
1/2 cup (or 120 ml/4 fl oz/122 g) milk
1/4 cup (or 60 ml/2 fl oz/61 g) vegetable oil
1 tsp vanilla extract
1/2 cup (or 120 ml/4 fl oz/122 g) boiling water
DIRECTIONS
Preheat oven to 350F/175C/gas mark 4. Set a pot of water to boil. Grease and flour the cake pans.
Whisk together the flour, cocoa, salt, baking powder, and baking soda.
In a separate bowl, whisk together the sugar, vegetable oil, egg, milk, and vanilla. Pour the dry ingredients into this bowl and whisk until combined.
Slowly stream in the boiled water while whisking. This will keep the egg from scrambling.
Pour the batter into equal amounts into each pan and put them in the oven for 20 minutes or until the cake tester (or knife or toothpick) comes out clean.
Rest on a cooling rack for 5 minutes then remove the cakes from the pans and allow the cakes to completely cool.
