🥔 What You’ll Need (Serves 4 – FREE)
1kg floury potatoes (e.g. Maris Piper), cut into chips
Low-calorie cooking spray
1 large green pepper, thinly sliced
1 large onion, thinly sliced
1 red chilli, sliced (deseed if you prefer less heat)
1 tsp Chinese five-spice
½ tsp white or black pepper
1 tsp salt (sea salt flakes work best)
👩🍳 How to Make It
Preheat your oven to 200°C / fan 180°C / gas 6.
Boil the chips for 10 minutes until just tender, drain, then shake to roughen the edges.
Spread onto a non-stick tray, spray lightly, and bake for 25–30 minutes until golden and crispy.
Meanwhile, stir-fry the pepper, onion, and chilli in a sprayed wok over medium-high heat for 8–10 minutes until softened.
Mix the five-spice, pepper, and salt. Toss through the cooked chips, add the veg, and serve hot.
