This cowboy cornbread casserole is so delicious and easy to throw together. It’s the perfect week night meal.
Recipe:
3 lbs ground beef
1 packet taco seasoning
2 cans of rotel
8 oz frozen corn
Box of corn bread mix prepared
1 can of cream corn
Cook ground beef. Season with taco seasoning. In a casserole dish combine beef, rotel and corn. In a bowl prepare corn bread mix as the box instructs then add 1 can of cream corn. Mix then pour over the beef mixture. Bake at 400 for 20 mins. Then serve and enjoy. I like to garnish mine with pico de gaio, hot sauce and sour cream. I hope you enjoy it as much as I do.
