Serves about 4-6 people
Ingredients:
• ½ cup of fine bulgur
• ½ large onion chopped fine
• 1 large clove of garlic, chopped or crushed
• 2 large potatoes boiled and peeled
• 1 tablespoon tomato paste
• Olive oil
• Salt/black pepper
• ¼ tsp Cumin
• ¼ tsp Summac
• ¼ tsp Paprika
• Optional: Aleppo red pepper flakes
Preparation
• In a large baking pan, add enough water to the bulgur to soak
• Boil the potatoes till done
• Saute the onions for 5 minutes, add the crushed garlic
• Add the onions, spices, the tomato paste to the bulgur and mix
• Add the potatoes and mash/knead with the bulgur
• Add olive oil, continue mashing till it becomes a uniform paste
• Spread on a plate or make patties
