Quick & Simple Aloo Gobhi Curry | आलू गोभी की मजेदार सब्जी - Maa ki rasoi se
Ingredients to make Aloo Gobhi Curry:-
• 3-4 medium sized potatoes (diced)
• 15-18 medium sized cauliflower florets
• 1/4 tsp. cumin seeds (for tempering)
• a pinch of asafoetida
• 1 medium sized onion sliced
• 2 medium sized tomato sliced
• 1 tsp. crushed cumin seeds
• 1 tsp. crushed coriander seeds
• 1/2 tsp. garam masala powder
• fresh paste of 6-7 cloves of garlic and 1/2" of ginger.
• 1/4 tsp. turmeric powder
• 1/2 tsp. red chili powder
• 2 slit green chillies
• 2 Tbsp. finely chopped fresh coriander leaves
• 3 Tbsp. oil
• 1 tsp. salt or to taste
Method to make Aloo Gobhi Curry:-
• Heat oil in a pan.
• fry cauliflower florets for 2 -3 minutes or till light brown in colour.
• Remove florets from oil and add ¼ tsp. cumin seeds and asafoetida then add diced potatoes.
• Saute for 3-4 minutes.
• Add sliced onion and saute till brown.
• Add florets and mix.
• Make space in the centre and add tomato slices, ginger garlic paste and all the dry masala powder.
• Cover and simmer for 2-3 minutes.
• After 3 minutes tomatoes will be soft.
• mix and add salt and water.
• Mix well cover and cook on low flame for 4-5 minutes.
• After florets and potatoes are soft add finely chopped coriander leaves and slit green chillies.
• Turn off the flame.
• Aloo gobi is ready to be served.
• Serve hot with chapati, puri or paratha.
