Discover the viscosity and flow characteristics of properly hydrated xanthan gum solutions—prepared at concentrations up to 6%.
In this video, we demonstrate how a Silverson High Shear Mixer can be used to fully disperse and hydrate food-grade xanthan gum, producing uniform, agglomerate-free solutions across a wide range of viscosities.
It is important to note that while a food-grade xanthan gum was used in this demonstration, results may vary depending on the brand and grade of gum utilized. The mixing system will also play a crucial role in the final viscosity obtained as inadequate dispersion and hydration can cause agglomerates in the mix, which will ultimately reduce the thickening effect's efficacy.
This example illustrates the viscosity and flow characteristics that can be expected with maximized yield when a solution is prepared using a Silverson mixer.
