Lubya is a kidney bean curry simmered to perfection in a tomato sauce with the perfect blend of seasonings. In just a few steps, you can make this delicious side dish to go with your fluffy rice!

Ingredients:
1 tbsp Oil
1/2 Onion, diced
2 cloves Garlic, minced
12 oz Tomato Paste
1 1/2 - 2 cups water
1 tbsp Italian Seasoning Mix
1 tsp Cumin
1 tsp Coriander
1 - 3 tsp Sugar
Salt and Pepper to taste
3 x 15oz cans Kidney Beans, rinsed
Instructions:
1. Heat the oil in a large pot over medium heat. Add the diced onion and sauté until softened for about 5 minutes. Then, add the minced garlic and cook for another minute until fragrant.
2. Stir in the tomato paste and water gradually until a sauce is formed. Add the Italian seasoning, cumin, coriander, sugar, salt, and pepper. Stir well.
4. Bring the sauce to a simmer, then reduce the heat to low.
5. Stir in the rinsed kidney beans and simmer for another 5-10 minutes, allowing the beans to absorb the flavors of the sauce.
