1. Chula Chicken Tacos
Ingredients:
1 lb chicken breast, diced
2 tbsp olive oil
1 tsp chili powder
1 tsp cumin
Salt and pepper to taste
Corn tortillas
Toppings: diced onion, cilantro, lime wedges, avocado
Instructions:
In a bowl, toss chicken with olive oil, chili powder, cumin, salt, and pepper.
Heat a skillet over medium-high heat and add the chicken. Cook until browned and cooked through, about 6-8 minutes.
Warm corn tortillas in a pan or microwave.
Assemble tacos with chicken and your choice of toppings. Serve with lime wedges.
2. Chula Beef Enchiladas
Ingredients:
1 lb ground beef
1 onion, chopped
2 cloves garlic, minced
1 can enchilada sauce (10 oz)
8 small flour tortillas
2 cups shredded cheese (cheddar or a Mexican blend)
Sour cream and green onions for garnish
Instructions:
Preheat your oven to 350°F (175°C).
In a skillet, cook the ground beef with onion and garlic until browned. Drain excess fat.
Stir in half of the enchilada sauce and half of the cheese.
Fill each tortilla with beef mixture, roll them up, and place them seam-side down in a baking dish.
Pour remaining enchilada sauce over the top and sprinkle with the remaining cheese.
Bake for 20-25 minutes until cheese is bubbly. Garnish with sour cream and green onions.
3. Chula Pork Carnitas
Ingredients:
3 lbs pork shoulder, cut into chunks
1 onion, quartered
4 cloves garlic, minced
1 orange, juiced (keep the skin)
1 tsp cumin
1 tsp chili powder
1 bay leaf
Salt and pepper to taste
Instructions:
In a slow cooker, combine pork, onion, garlic, orange juice, orange skin, cumin, chili powder, bay leaf, salt, and pepper.
Cook on low for 8 hours or high for 4 hours until the pork is tender.
Shred the pork with two forks and serve in tacos, burritos, or with rice.
4. Chula Lamb Chops
Ingredients:
1.5 lbs lamb chops
3 tbsp olive oil
3 cloves garlic, minced
1 tbsp rosemary, chopped
Salt and pepper to taste
Instructions:
In a bowl, mix olive oil, garlic, rosemary, salt, and pepper.
Rub the mixture onto the lamb chops and let them marinate for at least 30 minutes.
Heat a grill or skillet over medium-high heat. Cook lamb chops for about 4-5 minutes on each side for medium-rare.
Let them rest for a few minutes before serving.
5. Chula Meatball Sub
Ingredients:
1 lb ground beef or turkey
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg
2 cloves garlic, minced
Salt and pepper to taste
Marinara sauce
Submarine rolls
Mozzarella cheese, shredded
Instructions:
Preheat your oven to 375°F (190°C).
In a bowl, mix ground meat, breadcrumbs, Parmesan, egg, garlic, salt, and pepper.
Form into meatballs and place on a baking sheet. Bake for 20-25 minutes.
Heat marinara sauce in a saucepan. Add cooked meatballs to the sauce.
Serve in submarine rolls topped with mozzarella cheese. Broil briefly until cheese melts.
