Akki rotti is a gluten free roti made with raw rice flour. Ingredients like dill leave, onion, carrot make this roti really flavourful. There are many variations in this roti. Akki Rotti with Dil leaves is my favorite, so do try this if you get dill leaves at your locality, else you can skip.
If you are a beginner, give a good resting time to the dough so you can shape the Roti easily and it will not break while you are transferring from cloth to Tawa.

Rice flour 2 Cups
Onion 1
Carrot 1
Dill leaves 1 cup (chopped)
Water – As needed
Salt – As needed
Oil – as needed
Instructions
Chop Onion finely, grate a carrot and chop dill leaves finely.
Mix all the chopped ingredients to rice flour and give a good mix without water.
Now add water to Rice flour mixture and make a loose dough.
At this stage, you can rest this dough or refrigerate for next day.
Else you can start making rottis.
Take a muslin cloth and damp with water.
Now take big lump of the rice flour dough and pat them on the damp cloth as thin as possible with the help of water ( Please check the video)
Once the Rotti is ready, heat Tawa and drizzle some oil.
Transfer Rotti from cloth to Tawa ( please check the video)
Cook both the sides of Rotti for 1 to 2 minutes.
Akki Rotti is ready.
Notes
If you are a beginner, give a good resting time to the dough or you refrigerate for next day use, this helps you while making thing Rotis on cloth as it won't break easily.
