Ingredients:-
Chicken- 700gms
Onion- 2medium size
Ginger- 1.5inch
Garlic- 4-5
Chilli- 2-4
Curd- 1/2cup
Cream- 1/2cup
Chaat masala- 1tsp and for garnishing
Garam masala- 1/2tsp
White/black pepper- 1/2tsp
Kasuri methi (dried fenugreek leaves)- 1tbsp and 1/2tbsp at last
Jaiphal (nutmeg)- 1/8th
Salt- according to taste
Sugar- 1/4tsp (optional)
Oil- 4-5tbsp
Process:-
1. Make a fine paste of onion ginger garlic and chillis.
2. Make a marinade by mixing onion ginger garlic paste, curd, cream, chaat masala, garam masala, white pepper, kasuri methi, nutmeg, and salt.
3. Add chicken to the marinade and make sure all the slits are nicely coated. Marinate the chicken for at least 2hours in the refrigerator.
4. After 2hours, heat 4-5tbsp of oil in a nonstick frying pan on medium-high flame.
5. Wipe out the extra marinade from the chicken pieces and fry them for 10-12mins or until they are brown from all the sides. Flip the pieces frequently to avoid burning. Keep aside once the chicken pieces are fried.
6. Now for the gravy, take a wok. Heat the same fried oil in medium flame. Stir and bring it to a boil.
7. Add the fried chicken pieces and cook for 8-10mins. Flip, stir, cover, and repeat every 2mins.
8. Once done, check whether the chicken is tender. Add a slash of fresh cream if the consistency of the gravy is thicker. Check and adjust the salt and pepper too. At last add kasuri methi and sugar (optional). Mix. And Shahi malai chicken is ready to serve. Garnish with fresh cream on top.
N.B: Tastes good with any type of Indian bread.
