Well, this one was a difficult one and it would not work via WiVRn, unfortunately, because a couple inputs wouldn't register for some reason (inventory menus wouldn't register the right trigger to select).
And in the github page of VHVR they do not make very clear how to install the BepInEx framework and the mod.

So, first things first:
Install Valheim on Steam. You will NOT be using the Linux version, so go to the compatibility tab and select the latest stable proton. At this time, it's 9.0-4 as shown in the video.
Run it for the first time, select the "VALHEIM" option (NO VULKAN! VULKAN WILL NOT WORK!) which uses OpenGL, once in the menu go to options and configure it to 1920x1080 windowed (this is important), turn off antialias, SSAO and maybe a few other effects if your PC is not high-end. This is shown in the video.
Exit the game.
Now you would decompress both the BepInEx for valheim and the vhvr mod on the game's directory -- see the pinned comment, because there are some addresses and caveats with them.
Go to the game properties, launch options and change to that: WINEDLLOVERRIDES="winhttp=n,b" %command%
Note: every time you want to play Valheim normally, you can remove these launch options or better yet, just change the variable to a slight different name, e.g. NOWINEDLLOVERRIDES="winhttp=n,b" %command%
(and when you want to change back to VR just remove the "NO")
Start ALVR/SteamVR, connect the client.
Select Valheim on your library and just press play. It should work.
