Its Mango season and mango is abundance here in Malaysia. Its so sweet and fragrance. The color is absolutely amazing and not to mention is cheap ! the mango that im using is from Thailand. If you cant get fresh mango or its not in season, try to go for frozen mango puree, it works excellent as well in this recipe.

In this recipe im using what we call Emulsifier sponge which is a emulsifying agent that helps to make a soft and beautiful sponge cake. The ingredients is sometimes called ovalette, SP, cake stabilizer, emulsifier.
Emulsifier Sponge Cake :
180g Egg
90g Sugar
1g Salt
42g Milk
85g Plain Flour/all purpose flour
12g Emulsifier(ovalette)
15g Cocoa powder
42g Neutral oil
Mango Mousse:
150g Mango Puree
4g Gelatin
20g Water
1nos Egg yolk
40g Milk
30g Sugar
150g Whipping Cream 35%fat
Mango Jelly:
30g Water
2g Gelatin
10g Sugar
40g Mango Puree
Sugar syrup:
20g sugar
50g Water
