Gluten Free Crepe Cake for Mother's Day

I am making this cake for Mother's Day this year. This is an easy recipe using vanilla pudding for the filling. You can make this with regular flour for a non-gluten-free version.
Ingredients for gluten-free crepes:
1-1/2 cups almond milk
1-2 tsp sugar
3 large eggs
1/2 tsp vanilla extract
1 to 1-1/4 cups gluten-free all-purpose flour (Bob's Red Mill)
1/2 tsp xanthan gum
1/2 tsp salt
1 tbsp Melted butter, optional
Ingredients for vanilla pudding cream:
1 box - 3 oz (4.5 cup serving) Jello Cook & Serve Vanilla Pudding Mix
1-1/4 cups almond milk
1 cup whipped cream or Cool Whip
Ingredients for chocolate ganache topping:
1-1/4 cups dark chocolate (or semi-sweet, or milk chocolate)
1/4 cup (4 TB) milk or cream (add more if you like a more fluid ganache)
1 TB butter
Method:
1. Prepare the gluten-free crepes by mixing all of the ingredients for the crepe together until smooth.
2. Heat a non-stick pan over medium-low heat. Grease the pan with a little bit of oil.
3. Pour about 1/4 to 1/2 cup of the batter into the pan, till and swirl the pan so that the batter will be thin evenly. Cook for about 1-2 minutes or until the edges start to dry. Then flip the crepe and cook for another 1 minute. Transfer the crepe to a plate.
4. Stir the batter every time and repeat the process for the rest of the batter. Roll the crepes or stack or fold in a quarter, and store them in the fridge until needed.
5. Prepare the vanilla pudding cream by mixing the milk and vanilla pudding mix together. Cook it over medium heat and bring it to a boil. Remove the pudding to a bowl, cover with plastic wrap, and chill it for 1 hour or until completely cool.
6. Mix the pudding and whipped cream together until combined.
7. Layer a piece of the crepes on a serving dish, spread a thin layer of the vanilla pudding cream on top, then repeat the process for the rest of the crepes and pudding cream. Chill the cake in the fridge.
8. Make chocolate ganache by heating the chocolate, milk, and butter in a double boiler over low heat and the simmering water is not touching the bottom of the pan. Stir until very smooth.
9. Pour the chocolate ganache over the cake and let it cool to room temperature. Chill the cake if desired.
