When the weather turns cold, this is the kind of soup I make at home.
Warm, savoury, and comforting, with tender beef, soft potatoes, and vegetables simmered in a rich broth. Simple cooking, but method matters.
For this recipe, I use top loin beef, which is a naturally tender cut. Because of that, it doesn’t need long cooking. The beef is seared first, set aside, and returned to the pot only at the end, using residual heat. This keeps it juicy and tender instead of dry.
If you’re using tougher cuts like chuck or brisket, those will need a longer simmer.
Ingredients
Beef
2 lb top loin beef, cut into bite-size pieces
Salt, to taste
Black pepper, to taste
Oil, for searing
Aromatics
1 yellow onion, diced
4 cloves garlic, crushed
1 thumb-size ginger, sliced and bruised
3 habaneros, sliced (adjust to heat tolerance)
Vegetables
2 carrots, sliced
2–3 celery stalks, sliced
2–3 potatoes, peeled and cut into chunks
Liquid
2 cups beef broth
1 cup water
Seasoning
1–2 beef stock cubes (to taste)
Salt, to taste
1–2 tsp honey
1–2 Tbsp Worcestershire sauce
To Finish
Fresh lime, for serving
Method
Season the beef with salt and black pepper.
Heat oil in a pot over medium-high heat. Sear the beef until nicely browned on all sides. Remove and set aside.
In the same pot, add onion, garlic, ginger, and habanero. Sauté until fragrant.
Add carrots and celery, stir well.
Deglaze the pot with a splash of beef broth, scraping up the browned bits.
Add the remaining beef broth and water. Bring to a boil.
Season with beef stock cubes, salt, honey, and Worcestershire sauce. Taste and adjust.
Add the potatoes and simmer until tender.
Turn off the heat and return the seared beef to the pot. Let it rest for a few minutes before serving.
Notes on Beef Cuts
Tender cuts suitable for this method:
Top loin
Sirloin
Ribeye
Tenderloin
Striploin / New York strip
Flat iron
Tougher cuts like chuck or brisket require longer cooking time and a different method.
Serving
Serve hot with rice.
Finish with fresh lime just before eating.
