WAFFLES (vol 1 pg 34)
(makes a large batch)
3 eggs
2 c. flour
2 1\2 c. milk
3\4 c. vegetable oil
1 1\2 T. white sugar
6 tsp. baking powder
1\4 tsp. salt
3\4 tsp. vanilla extract
Preheat waffle iron. Beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, oil, sugar, baking powder, salt, and vanilla, just until smooth. Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.

SKEDADDLES (vol 2 pg 70)
2 c. or one can chow mein noodles
1 c. mini marshmallows
3\4 c. sugar
1\2 c. evaporated milk (no substitutions)
2 T. butter
1 c. semi-sweet chocolate chips
Bring sugar and evaporated milk to a full boil. Add chips and butter and stir until melted and smooth. Pour over noodle\marshmallow mixture and stir until covered. Drop by spoonfuls onto wax paper. Cool before serving.
