One-Pot Lamb & Rice You’ll Crave Again and Again!

500 g lamb (bone-in pieces for more flavor)
2 cups basmati rice
1 large onion (chopped)
3 tbsp tomato paste
2 medium tomatoes (grated or finely chopped)
2–3 cups lamb broth (from cooking the lamb)
1 tsp turmeric
1–2 tsp Baharat (Middle Eastern spice mix)
Salt & black pepper (to taste)
A pinch of cinnamon (optional)
3 tbsp oil or lamb fat
Fresh herbs or pickles to serve (optional)

🍳 Instructions:
1. Cook the Lamb:
In a pot, place the lamb pieces with a bit of salt, turmeric, and water. Simmer gently for about 1 to 1.5 hours until the meat is tender. Save the broth – it's full of flavor!
Combine:
Add the cooked lamb pieces to the sauce. Stir gently.
Pour in about 2–3 cups of the lamb broth. Bring it to a light simmer.
4. Add the Rice:
Wash and drain the rice, then add it directly to the pot with the lamb and sauce.
Season with salt and pepper. The liquid should cover the rice by about 1 cm – adjust if needed.
5. Cook the Dampokht:
Cover the pot. Cook over medium heat until the water is absorbed (about 10–15 minutes).
Then reduce the heat to low, cover with a clean kitchen towel or paper towel under the lid, and steam for another 30–40 minutes.
