INGREDIENTS
----------------------
6 sun-dried tomatoes
2 crushed garlic cloves
3x400g tins of chopped tomatoes
500ml chicken or vegetable stock
150ml whole (full-fat) milk (you can use other milk if you prefer.)
150ml double (heavy) cream
salt and pepper
1 tbsp sugar (or to taste)
I served this with a drizzle of cream, croutons and chopped sun-dried tomatoes but you could grate a bit of parmesan or pesto.
This soup also freezes really well.
