ORANGE CHIFFON CAKE RECIPE
Ingredients:
220 g cake flour
1 tsp baking powder
1/4 tsp salt
6 egg yolks
1 tsp orange zest
120 g caster sugar
180 ml fresh orange juice
120 ml vegetable oil
Meringue:
6 egg whites
1/8 tsp cream of tartar
100 g caster sugar
Orange Sugar Icing:
100 g icing sugar
2 tbsp fresh orange juice
Method:
1. Pre-heat oven to 130 degrees Celsius convection or 150 degrees Celsius conventional setting.
2. Separate egg yolks from egg whites. Set aside.
3. In a large bowl, sift flour, baking powder and salt. Whisk together, then make a well in the center.
4. Add in egg yolks, orange zest, sugar, orange juice and vegetable oil. Mix well with an electric mixer. Set aside.
5. Bring out the egg whites, then add cream of tartar. Whisk with an electric mixer, then gradually add sugar. Whisk until stiff peaks.
6. Fold half of the meringue into the batter until well combined.
7. Add the rest of the meringue, fold until well combined.
8. Transfer batter into a 9-inch tube pan. Run batter with knife and tap pan to get rid of bubbles.
9. Bake for 70 minutes at 130 degrees Celsius convection or 150 degrees Celsius conventional oven.
10. Allow to cool up-side-down on a wire rack.
11. Slowly remove cake and transfer on to a large plate. Set aside.
12. Prepare orange sugar icing by combining icing sugar and fresh orange juice.
13. Put icing on top of the chiffon cake. Let it set before slicing.
14. Slice cake and enjoy!
