Coulibiac
For the coulibac
500g flaky pastry
1 kg fresh salmon
3 hard-boiled eggs
300g fresh spinach melted with butter
250g slices button mushrooms
1 onion
100g grain rice cooked in a stock
50g butter
Salt, pepper
For the white butter
4 cl wine vinegar
1 dl white wine
2 slices shallots
150g butter (in small pieces)
1 pinch of “mignonette” pepper
6 dill sprigs
Medovik of Emmanuel Ryon
For the Medovik biscuit
320g sugar
2 eggs
220g of buckwheat honey
100g butter
18g soda
10g lemon juice in bottle
600 g flour

For the ice cream
517g full cream milk
165g soured cream
10g inverted sugar syrup
95g sugar
50g atomized glucose
50g milk powder 0%
4,5g stabilizer
110g mascarpone

For the mascarpone
