For baking Fresh pumpkins cut in half
400° F for 35-60 mins or until you can Pierce the pumpkin with a fork. smaller pumpkins less time usually around 40 mins.
Mom’s Classic Pumpkin Pie Recipe
Ingredients:
• 2 eggs, slightly beaten
• 2 cups canned or cooked fresh pumpkin
(For canned pumpkin, ED Smith 540 ml is a great option)
• ¾ cup brown sugar, firmly packed
• ½ teaspoon salt
• 1 teaspoon cinnamon
(I love cinnamon, so I use a heaping teaspoon)
• 1⅔ cups evaporated milk (370 ml or a 14-oz can)
(If using fresh or frozen pumpkin, only use 1 cup of milk)
• 4 tablespoons flour
• ½ teaspoon vanilla
Mix everything together and pour into a 9-inch unbaked pie crust.
Baking Instructions
• Bake at 425°F for 15 minutes
• Then lower the temperature to 350°F and bake for 45 minutes, or until a knife inserted in the center comes out clean
• If the crust starts to get too dark, cover the edges with aluminum foil
