Plum Cake ❣️ it's the time of the year 🎄
This is the season where the plum cake gets all the attention! Here is the recipe!
• 3/4 cup unsalted butter
• 1 cup brown sugar
• 1 ½ cup raisins
• zest & juice of 1 lemon
• 1 cup spiced rum
• 1/2 cup ground almonds
• 3 eggs
• 1 2/3 cup all-purpose flour
• ½ tsp baking powder
• 1 tsp ground mixed spice
• 1 tsp ground cinnamon
Heat up the butter, raisins, spiced rum, brown sugar, lemon zest and juice in a pan. Head in a low to medium heat for 10 minutes while gently stirring the mixture.
Remove from heat and let it cool before adding the ground almonds. Whisk the eggs and stir into the mixture.
Preheat over to 300°F.
Add the flour, baking powder, all spice, cinnamon powder and fold together until everything is beautifully mixed together.
Transfer the mixture into a tin and pop it into the oven. Bake for 45 minutes.
Once out of the oven, allow it to cool down before digging in.
