this is part 23 and today we’re taking a trip to Greece where we will be making Stifado 🇬🇷

Ingredients:
10-12 small shallots
300g chuck roast beef
1 tbsp vegetable oil
1 brown onion
3 cloves of garlic
1/2 tbsp black peppercorn seeds
1 cinnamon stick
3 bay leaves
2 whole cloves
3 pimento seeds
1 & 1/2 tbsp tomato paste
300ml red wine
1 tbsp white wine vinegar
1 tsp cinnamon ground
1 tsp ground pimento
1 tbsp dried/fresh rosemary
1 tbsp dried/fresh oregano
5/6 sprigs of fresh thyme
Water warm
1/2 cup chopped parsley
Step (1)
Slice your beef into equal sized chunks. Heat up 1 tbsp of vegetable oil in a large stewing pot then once hot add the beef and sear the beef until brown all over, then remove from the pan. In the same pot with the fat from the beef, fry your shallots whole until lightly coloured all over, then remove and set aside.
Step (2)
Now fry your sliced onion for 5 minutes until softened, then add your whole spices (black pepper, bay leaves, cinnamon stick, cloves and pimento seeds and cook for a further 3 minutes on a medium heat. Then add the chopped garlic and tomato paste at the same time, mix well and cook for 10 minutes on a medium heat until the tomato paste turns a dark red but not burnt.

Then add the red wine and beef then increase the heat and bring the pot a simmer. Reduce the red wine by half, this should take about 15/20 minutes. Then add the ground cinnamon, ground pimento, fresh thyme, fresh rosemary and dried oregano. Mix well then add some water, make sure there’s enough to cover the beef. Bring to a simmer, cover and cook for 2 hours or until the beef is melt in your mouth tender. Finish off with some freshly chopped parsley, serve with some fresh bread or chips and enjoy ;)
