Welcome!
We are a homesteading, homeschooling family of 7. Due to recent events (job loss/career change, health issues, rising food costs, etc.) we are having a hard time making ends meet despite our best efforts at frugality. So we are tapping into our local food banks to help us feed our family. Come along as I show you what we are blessed with, what we add to it via grocery store and garden, and how I use it all to nourish our bodies.

Tortilla Chip Pie
2 cans kidney or black beans, drained
1 lb ground beef or turkey
1 tbsp dry minced onion
1 tbsp chili powder
1/2 tsp salt
1/2 tsp cumin
1/4 tsp each garlic powder and oregano
1/8 tsp pepper
15 oz pasta sauce
3 cups tortilla chips
2 cups shredded mozzarella
Brown meat and drain. add beans, seasonings, and pasta sauce. Heat through. Pour into a 9x13" pan. sprinkle with cheese. Scatter on chips, crushing some.
Bake at 400' for 20 minutes.
Serve on lettuce. Top with tomato, sour cream and/or guacamole.
Makes a great freezer meal.
