Here are some tips and tricks to pulling light roast coffees on the La Pavoni Europiccola! Shout out to Claudio Santoro for showcasing dry pumping to quickly heat up La Pavonis. I like to ensure my group is fairly hot before I pull lighter coffees (90-95C). My model is a post millennium so there is some amount of temperature stability.
Pulling Light Roasts:
My preferred methods are to downdose, pull fast, and pull long AKA Turbo shot. In order to pull 1:3 on the Europiccola without Fellini movement, I suggest you downdose to around 10g, use a coarser grind size, and pull fast (Peak around 4-7 bars). I show you a standard turbo 1:3 and a turbo bloom. These are both profiles that will allow you to extract lighter roast coffees while accounting for the lower yields of the Europiccola.
You can cross-reference the graphs I show in the video (those are done on the Decent) and target those pressures throughout your shot.
