These whole-grain oat rolls use NO flour and come out soft, tasty, and perfect for anyone wanting a no-flour Shabbat bread alternative.

Recipe:
Ingredients:
1.5 cups whole oats (usually sold in health food stores)
1 cup water
1 tbsp apple or white wine vinegar
1 tsp salt ½ tsp. baking soda
Optional: 2 tbsp of your favorite additions like nuts, seeds, olives, dried onion etc
Directions:
Place oats in a glass bowl, cover with water so they’re completely submerged and cover the bowl. Let sit for 8 hours or overnight. Drain water and place oats in a strong blender, add 1 cup of water and blend well until it becomes a sticky thick paste. Place in a bowl, cover and let sit for 8 more hours. Add the vinegar, baking soda, salt and flavorings and mix well. Spoon “rolls” in a lightly oiled muffin tin. Sprinkle sesame or other seeds, or za’atar spice on top for a nice finish. Bake at high for 10 minutes at 220ºC (430ºF), then 15-20 minutes at 175ºC (350).
Important tip! Place a pan of water in the oven – it bakes better. Depending on your oven it may need more baking time.
