This is another mini how-to that can be generally used regardless of the weapon. Since polearms in this game don't have much mobility and AI don't switch hands, I can roughly assume the type of attack coming.

Keeping the axe in between my body and the billhook, insures SOME type of defense. This doesn't always work, considering a lot of power can be generated from polearms, which can easily break through a guard.

The AI kept regularly placing the the billhook in front, which would keep me from closing the distance. So in order to find an opening, whenever the billhook was close enough, I would beat it away until finally he committed to a stab, which was beat away causing the opponents polearm's head to drop to the ground, making way for an opening and a swift death.
