Ingredients: Couscous Pour-Over Salad (serves 1-2)
2 tbsp peanut butter
1 tbsp tamari (or soy sauce)
¾ tbsp rice vinegar
¾ tbsp maple syrup (or liquid sweetener of choice)
½ tsp chili garlic sauce (or hot sauce of choice)
1 tbsp hot water (to thin)
¾ cup (130 g) couscous, uncooked (Moroccan style)
1 cup (91 g) broccoli florets, raw and sliced thinly
1 medium carrot (61 g), raw and sliced thinly
½ cup (59 g) edamame, cooked and shelled
¾ cup (178 ml) filtered water (can use cold or boiling water)
– Optional toppings
Roasted peanuts
