R O A S T E D - A U B E R G I N E - C U R R Y ~
Serves 4
INGREDIENTS
2 large aubergines or 12 baby
1 tbsp garam masala
1 tsp ground tumeric
1 tsp ground cumin
1 tsp ground coriander
2 onions
400ml coconut milk
400g tinned chopped/baby tomatoes
3 garlic cloves
20g fresh coriander
METHOD
1. Preheat oven to 200*.
2. Chop the aubergines into chunks and add to a roasting/baking tin with some olive oil.
3. Roast in the oven at 200* for about 20 mins.
4. Peel and chop the onions and garlic.
5. Fry off the onions in a little oil for a few mins until softened on a medium heat. Add the garlic and cook for a min. Add a sprinkle of sugar (optional) and all the spices. Stir and add the tomatoes and about 200ml water. Simmer for about 10 mins or longer if you have the time.
6. Add in the coconut milk and stir.
7. Add in roughly chopped coriander and the roasted aubergine and stir.
8. Serve with your choice of rice, naan bread etc and garnish with some coriander (optional).
